If you’ve always struggled to make stir-fry taste as good at home as it does at your favorite restaurant, give this recipe a try! The tofu gets nice and crisp in the oven then soaks up the delicious flavor of homemade stir-fry sauce in the wok. Feel free to leave out the brown sugar in the sauce for a more spicy, less sweet version!
INGREDIENTS:
Makes 4 servings
- 2 lbs. extra firm tofu
- 2 tsp. sesame oil (or avocado oil, coconut oil)
- 2 cups broccoli florets
- 2 medium bell peppers, sliced
- 2 cups snow or snap peas
- 1 cup mushrooms, sliced
Sauce
- 1/4 cup less sodium soy sauce (or tamari, coconut aminos)
- 1/4 cup water
- 4 tsp. brown sugar or agave (optional)
- 2 tsp. corn starch
- 1-2 tsp. sriracha sauce (optional)
- 2 garlic cloves, minced
- 2 tsp. fresh ginger, grated
DIRECTIONS:
- Preheat oven to 425 degrees.
- Dice tofu and lay out on 2-3 layered paper towels, pressing another 2-3 layered paper towels on top to remove excess water.
- Bake tofu at 425 on a baking sheet lined with parchment paper for 25 minutes.
- Meanwhile, combine sauce ingredients and set aside.
- Stir-fry baked tofu and vegetables in a large skillet or wok with sesame oil over medium-high heat for 5 minutes or until veggies are crisp-tender.
- Add sauce and simmer a couple minutes until thickened. Enjoy!
- Leftovers will keep in the fridge in an airtight container up to one week.
